Fresh Fruit Tart
12" pie crust, baked
assorted sliced fruit (like strawberries, kiwi, banana, etc)
Filling: Glaze:
3 oz cream cheese 1/2 cup sugar
1/4 cup sugar 2 Tbsp cornstarch
1 Tbsp milk 1/4 cup water
1 Tbsp orange rind 1/2 cup orange juice
2/3 cup heavy cream 1/4 cup lemon juice
Combine cream cheese, sugar, milk, and orange rind. Beat until
smooth, then add the cream and beat until mixture thickens, about
5 minutes. Spread on the baked pie crust and chill. Arrange
sliced fruit on top. To make glaze: combine sugar and
cornstarch in a pan, then add water and juices. Bring to a boil
and cook 1 minute. Let cool slightly and spoon evenly over fruit.
Keep chilled until serving time.
My mom makes this a lot in the summer. I think she got the recipe from
Family Circle or Woman's Day several years ago. For the pie crust, use
any basic (or fancy) 2 crust recipe you like. My mom has one of those
12" tart pans, but a pizza pan would probably work. You could even use
a pre-baked crust, but the filling will be thicker because it would be
only a 9" pan. I've also made this into individual 4" tarts.
